Plant This, Eat That: Queen Kale Sauce!

Tired of kale salad or kale chips? Blend it into a sauce instead.

Have you ever been obsessed with a food? Of course you have, silly question. I find that my food obsessions center around foods that I have never previously made, subsequently try to make and in the end, do not make the exact same way as to result in me being obsessed with my own creation.

But you know what that means? It means I—and probably you—never stop trying. And in the process you—or at least I—produce a multiverse of iterations that, while not the exact same food we worshiped from first taste, are not bad takes on the original.

This Queen Kale Sauce is one of those created-from-an-obsession foods. I experienced the original version of this sauce a couple of years ago while attending the Tropical Plant International Expo in Tampa Bay. I stopped for a quick, healthy lunch at a quick and healthy lunch sort of place called Fresh Kitchen. The Holy Kale sauce wasn’t my choice of sauce for my giant spinach-based bowl. No, I had done what I normally do when I hit up a new joint: When in doubt, I ask the people who work there what they would choose. I should have known from the enthusiast reaction to my question that this Holy Kale sauce would be fantastic.

It was. And thus my months’—nay, years’ long pursuit of replication began.

Thanks, Google, for giving me a really good starting point, which really was built on the foundation of others being obsessed with this same Holy Kale sauce.

What follows is my take on Fresh Kitchen’s Holy Kale Sauce, which I have renamed as Queen Kale Sauce. Because it rules them all.
